About a week ago, I bought a butternut squash. One of these guys:
I was determined to cook it.
So I did.
I saw. I cooked. I conquered.

It wasn't as hard as I thought it would be.
And, I have to say, it was pretty tasty.
Domestic quota for the semester? Done.
Go me.
Next time use it in chicken enchilada soup. There is a recipe on melskitchencafe.com that is amazing.
